By now you’re probably fed up and have read about a million pancake recipes on the internet. But i wanted to share this particular recipe with you because of how it came about. So I’ll just crack on with it. (pardon the pun)
Well the idea for this pancake recipe started one morning last week when we didn’t have much food in the house for breakfast/dinner and I was starving, so I looked in the fridge/cupboards to see what we had and with the following ingredients (Flour, Sugar, ground cinnamon) i took a gander on Google to see what i could make.
And what I thought of was egg/milkless pancakes which turned out rather well if I’m honest, Logan liked them too!
This is how they turned out, not bad for a quick and filling snack. Here’s what I did:
- Took a 1/4 cup of flour, baking powder, 2 teaspoons of brown or white sugar (i used brown) and some ground cinnamon for a little bit of taste if you wish, Or you could add Vanilla essence.
- For the liquid part of the mix I just used a dash of lemon juice and water and mixed until i got a smooth batter/ pouring consistency. (If you want to make waffles, thicker is better)
- Then all that’s left to do is heat up a little butter in a pan and pour in a good dollop of the mixture and leave for a couple of minutes until little holes appear on the top and stay there, then it’s time to flip!
