Today I want to share with you one of my personal favourite pasta dishes, even more so than Spaghetti bolognese! And it’s this Courgette, baby cherry tomatoes with garlic and basil and spaghetti, Logan loves it too!
The main reason behind cooking this dish was because I’d always get some sort of courgette pasta thing frozen from a ready meal, which was ok but I knew that I’d be able to make it myself for a fraction of the price, and it’s great for BLW too!. And another reason is, I’m trying to eat a bit better, not only for myself but for my 5-week old baby foetus!
So let’s get started…
Before you start the prep for the veg, boil the kettle, and fill a pan with salted boiled water and then add your pasta of choice, I love spaghetti!.
The nex thing you need to do is prep all the veg that you want to use in the dish, for me it was courgette, baby cherry tomatoes and red onion, but you can add mushrooms, chicken, anything you fancy.
Then you need to melt some butter or oil in a pan and add the garlic, chopped red onion and courgette and cook on a low heat so that the onions don’t burn.
Toward the end of the pasta cooking time throw the cherry tomatoes and any other ingredients, herbs and spices into the courgette mix and cook until nicely heated through.
And there you have it, finish off with some mozzarella cheese or if you have it parmesan cheese and enjoy!
